There is one moment of quiet that happens in my day...nap time! It is sacred. I've started to skip the mac n cheese with the kids and make myself a "grown-up" lunch now and then for a treat. This is true "Gilded Burlap"...healthy with a stroke of indulgence stirred in.
One can precooked chicken (Kirkland from Costco)
One big handful of Craisins
2 dollops of Mayo-Kraft with olive oil
One small apple cut into small chunks
One Great Big handful of chocolate chips!
Salt and pepper to taste
I like it on a slim bun for a chicken salad sandwich....or right out of the bowl....it doesn't matter I'm not sharing anyways!
